I found an instructional DVD at the library called Shape of Speed by North Sails. It's all about sail trim of the main, jib and spinnaker. The boat they sail for the demos is much larger and has more controls than the DS (including forestay and backstay adjusters, outhaul controls, etc.), but the concepts are applicable. They use live footage along with some nice graphics to demonstrate the different shapes of sails. The reefing demo is one to envy - nice to have a couple crew and lots of controls to pull it off. They reef in about 10 seconds. :)

They discuss how to mark your controls and adjustments so you can return to optimum trim for different conditions.
